Is there a way to create folders or directories in opendocman which are used as storage areas for various docs?

If you're referring to how the documents are displayed to the user, then you may want to look at the "TreeView" mode. It's somewhat limited at the moment, but may be closer to what you want.
If you're referring to the how the docs are physically stored on the disk, then there is no way to change that right now. It wouldn't be too hard to use the first several characters of the filename to also be part of a subdirectory. For example, if the fileanme was "192.dat", we could change the path to be "1/9/192.dat", this would reduce the inode counts in each directory... which could improve performance in some ODM installations which have large numbers of documents.

The "Category" of each file can be used to organize the documents into virtual folders.
