Is it possible to have a log of every time a document was accessed, even just to view or print it?
If I can get this going, then opendocman will be precisely what I need.

If you have access to the webserver logs, then you can see when the documents viewed.
However, since printing occurs at the browser, you may not be able to tell if/when someone prints a document unless you can access the audit logs for your printers.
